Any suggestions on a Wiki to use and if there's a organization/company that would host it for free?

I don’t know if you use vmware but they have several out-of-box wiki appliances… first one that comes up in a search is Wikibox If that one doesn’t fit your bill try wikidot they will host the wiki off of a subdomain for you.

PBwiki is the one I see being used most often. They have a free solution as well as a paid version. I’ve edited and used a few of them and they work pretty well.

We’ve played around a little with Google Sites which is part of Google Apps and I think it’s a great free entry point to wikis. Great user interface, no install, and overall feels very “unwiki”, which I think is a plus.
Security is always the big question when it come to hosted services, and there’s even a banktastic question about Google Apps security that you may want to check out.
Other than that, there is PB WIki but I think it costs if you are over 3 users. You can also look at Media Wiki. It’s open source and is the backbone of Wikipedia, but I’ve never met anyone that had an easy time installing it or running it.
If a one page wiki (basic document collaboration) is all you’re looking for, Writeboard is also another option.

For the record, we use Dokuwiki and host it ourselves. Allows us import capabilities and can secure it better. There are also plugins to allow for expanded use. Hope that helps!

Thanks for all the suggestions so far! I really appreciate it. I’m looking through all of your advice; looking specifically for a wiki that has a very simple user interface without a lot of code and/or “programming”. Not sure if that’s possible, this is all very interesting but new to me.
